Rustic Meat and Bean Pot

Ingredients
- 1 lb sweet Italian sausage links, brushed with olive oil
- 1 T olive oil
- 1 slice bacon, chopped
- 1 lb boneless chicken thighs, bite-size chunks
- 8 oz pork loin, bite-size chunks
- 1 t thyme
- 4 cl garlic, crushed
- 1 ea carrot, chopped
- 1 ea onion, chopped
- 1 rib celery, chopped
- 1 ea bay leaf
- 1/2 C dry white wine
- 15 oz diced tomatoes in puree
- 2 cans cannellini beans, drained
Instructions
- Broil the sausages 15 minutes, turning once, then slice on an angle.
- Cook the bacon in a large skillet for 1 minute, then add the chicken and pork and brown on all sides. Add the thyme, garlic, vegetables, and bay leaf. Cook 5 minutes, then deglaze with the wine.
- Add the sausages to the pot, stir in the tomatoes and beans and heat through. Season to taste.
- Plate and serve.
